1. Slice off the top of each cherry tomato.
2. Carefully scoop out insides of tomatoes.
3. Turn tomatoes over, place on paper towels to drain.
4. In a small bowl, combine bacon, mayonnaise, scallions, Parmesan cheese, and fresh parsley.
5. Spoon mixture into tomatoes.
6. 16 to 20 servings.
