1. In a medium-mixing bowl, combine minced scallion, ketchup, light soy sauce, dark brown sugar, fresh lime juice, peanut oil, fresh ginger, garlic, and red pepper flakes. Whisk to mix well.
2. Cut sirloin steak into ¾” cubes.
3. Add meat to marinade. Marinate for 2 hours.
4. Remove meat from marinade to plate and reserve marinade.
5. Preheat grill.
6. Place meat on skewers. Grill over direct heat 3-5 minutes, turn as needed.
7. Add reserved marinade to saucepan and bring to a boil.
8. Stir in peanut butter to create satay sauce.
9. Serve sauce with beef skewers. |
