Ceviche

Shrimp marinated and "cooked" in citrus. This is a delicious seafood salad, combining marinated shrimp with sweet onion, and tomatoes. Salad is seasoned with oregano, cumin vinegar, jalapeno and cilantro. The perfect cold sald for casual or formal parties.
Ingredients -
1 pound Cod, diced in 1/2-inch cubes
2/3 cup Fresh Lemon Juice
2/3 cup Fresh Lime Juice
1 teaspoon Salt
1/2 teaspoon Dried Oregano
1 tablespoon Olive Oil
1/4 teaspoon Ground Cumin
1/4 teaspoon White Pepper
1 medium Tomato, finely diced
1/2 medium Sweet Onion, finely diced
1 teaspoon Vinegar
1 cup cooked Salad Shrimp
1 Fresh Jalapeno Pepper, seeded, deveined, and finely minced
1 tablespoon Fresh Cilantro, finely chopped
 
Preparation:

1. Combine cod with half limejuice, half lemon juice, salt, and oregano.

2. Place in refrigerator. Marinate 2 hours.

3. Remove from refrigerator and drain juice.

4. Combine, remaining lemon juice, limejuice, olive oil, pepper, cumin, tomato, onion, vinegar, shrimp, jalapeno, and cilantro.

5. Pour marinade into zip-lock bag.

6. Add cod.

7. Refrigerate 8 hours or overnight.

8. Serve in martini glasses.

 
Variations and Recipe Ideas:
Substitute fresh chopped parsley for cilantro.

Salad Shrimp
Salad shrimp are among the smallest shrimp you can purchase. You can use larger shrimp in this recipe, just be sure to chop the shrimp into very small pieces.
