Crab and Bacon Rolls

Crab rolled with breadcrumbs, basil, egg, salt, pepper, parsley, and flavor with tomato juice. Rolls are wrapped in bacon and broiled until bacon is crispy.

Ingredients -
1 (6 ounces) package Frozen Crabmeat, thawed, drained and cleaned
1 Egg, beaten
1 1/2 cups Fresh Bread Crumbs
1/2 cup Tomato Juice
1 teaspoon Dried Basil
1 teaspoon chopped Parsley
Salt, to taste
Freshly Ground Black Pepper
12 Bacon Slices
 
Preparation:

1. Preheat broiler.

2. Combine crabmeat, egg, breadcrumbs, basil, parsley, salt, pepper and tomato juice.

3. Shape into 12 equal sized rolls.

4. Wrap bacon around each roll. Secure with toothpicks.

5. Place rolls on a rack. Place rack on a broiler pan.

6. Broil until bacon is crisp. Turn occasionally.

7. Serve immediately.

Crabmeat

Fresh crabmeat works in this recipe. The trick to a great appetizer is to make sure the fresh or frozen crabmeat is finely chopped and well drained.

Prosciutto

You could definitely substitute prosciutto for the bacon in this recipe. You will want to generously wrap each roll, as prosciutto is considerably thinner than bacon.
