Cuban Chicken Skewers

Boneless, skinless chicken breast pieces marinated in citrus, garlic and cuban style spices, skewered with jalapeno peppers and grilled.

Ingredients -
1/2 cup Orange Juice
3 tablespoons Fresh Lemon Juice
1 tablespoon Olive Oil
2 large cloves Garlic, minced
1/2 teaspoon Paprika
1 teaspoon Ground Cumin
1/2 teaspoon Dried Oregano
1/2 teaspoon Coarse Salt
2 pounds Boneless, Skinless, Chicken Breast, cut into 32 chunks
12 medium Jalapeno Chili Peppers, halved lengthwise
2 servings Olive Oil Cooking Spray

Preparation:

1. Add orange juice, fresh lemon juice, olive oil, garlic, paprika, ground cumin, dried oregano, and salt to a large zip-lock plastic bag.

2. Add chicken and jalapeno chili peppers to zip-lock bag. Zip and shake or turn to coat.

3. Place bag in large casserole dish and marinate 8 hours in the refrigerator.

4. Preheat gas, charcoal or indoor grill.

5. Prepare skewers with 4 pieces of chicken and 3 jalapeno pepper halves per skewer.

6. Coat with olive oil cooking spray and grill 8 minutes, turning occasionally

7. Coat with cooking spray then grill skewers turning often for 8 minutes.

Any non-stick cooking spray will do the trick with this recipe, or you can drizzle olive oil over the skewers in place of the olive oil spray.

Wooden skewers should be soaked in water 30 minutes or longer so the skewers do not burn when placed on the grill.
