Grilled Peanut Butter Shrimp Kabobs

Creamy peanut butter, soy sauce, sugar, garlic powder, and peanut oil basted shrimp, skewered, grilled, and served with peanut butter chili sauce.

Ingredients -
1/4 cup Creamy Peanut Butter
1/4 cup Light Soy Sauce
1/4 cup Granulated Sugar
1 teaspoon Garlic Powder
2 tablespoons Peanut Oil
1 tablespoon Water
24 Large Shrimp or Prawns, shelled and deveined
Wooden Skewers
 
Preparation:

1. Add peanut butter to a small bowl.

2. Slowly add in tablespoons of soy sauce, blending in until smooth.

3. Add sugar, garlic and peanut oil, and water. Stir to combine.

4. Place 4 shrimp on each wooden skewer.

5. Brush shrimp with peanut butter sauce.

6. Grill 5 minutes over medium hot heat, or until shrimp are cooked through.

Wooden Skewers

Soak wooden skewers in water 30-45 minutes prior to slipping the shrimp on them. The water that soaks in to the wooden skewers will keep them from burning on the grill.

Peanut Butter Chili Sauce

In a saucepan over medium heat, combine all 3/4 cup Thai chili sauce, 3/4 cup creamy peanut butter, 3/4 cup chicken broth, 1/3 cup soy sauce, 3 tablespoons Asian sesame oil, 3 tablespoons fresh cilantro. Heat, whisking occasionally, about two minutes until ingredients are blended. Cool.
