Southwest Enchilada Dip

Southest style cheese spread grat for fresh tortilla chips or sering on toasted crusty bread.
Ingredients -
2 (8 ounces each) packages Cream Cheese, softened
1-½ cups Cheddar Cheese, shredded and softened 1 (14 ounce) can Rotel Tomatoes
¾ pounds Cooked Chicken, seasoned southwest style
4 Green Onions, chopped
1 teaspoon Cumin
1-½ tablespoons Chili Powder
1 teaspoon minced Garlic
1 teaspoon Dried Oregano
1 teaspoon Fresh Cilantro
1/8 teaspoon Fresh Ground Black Pepper
 
Preparation:

1. Add softened cream cheese, softened cheddar cheese, cooked chicken, green onions, dried cumin, chili powder, minced garlic, dried oregano, fresh cilantro and fresh ground black pepper to a large serving bowl.

2. Cover and chill in refrigerator overnight.

Rotel tomatoes are a commonly know brand of tomatoes canned with chili peppers. The brand has several varieties, including mexican and italian style, mild and hot. Diced fresh or canned tomatoes with finely chopped fresh jalapeno pepper would be a good substitute.
